Black Bean Burger

  • 2 tablespoons vegetable oil
  • 2 celery stalks, chopped
  • 1 onion, finely chopped
  • 1 clove garlic, minced
  • 1 15-ounce can black beans, rinsed and drained
  • 1 large egg, lightly beaten
  • 1/2 cup plain bread crumbs
  • Salt and pepper
  • 1 teaspoon cumin


Start by preheating an oven to 375°F. Line a large, rimmed baking sheet with foil; oil lightly.

Next, heat oil in a large skillet over medium-high heat. Mix in celery and onion and cook, stirring often, until soft for about 3 to 5 minutes. Add garlic and cook for another minute.

You’re doing great. Pour the beans into a large bowl and mash. Mix in the vegetables from skillet, stir in egg, cumin and bread crumbs. Season with salt and pepper.

Almost there! Make 4 to 6 patties and place them the baking sheet. Bake the patties for about 10 minutes on each side until firm and set. Serve on whole-grain buns with lettuce, and tomato. If you’re feeling adventurous add more vegetables, like red onion.
